This is a very favorable way to cook squash. I tried it on my family and they loved it. I found the recipe , but I substituded the bacon strips with bacon grease. Ingredients:
1 yellow squash, cut 1/4 in. slices |
1 zucchini, cut 1/4 in. slices |
1 medium onion, chopped |
4 tablespoons diced canned tomatoes |
1 teaspoon salt |
1/4 teaspoon black pepper |
1/2 teaspoon sugar |
1/2 teaspoon basil |
1 teaspoon bacon grease |
Directions:
1. Melt bacon grease in large skillet. 2. Add onion, squash, and tomatoes, sprinkle with remaining ingredients. 3. Cover and cook over low-medium heat for 15 min. 4. ,or until tender, stirring several times. |
