Mom's use of those not so nice winter tomatoes when they aren't very flavorful unless made this way. Served at breakfast with cheese grits and sliced bacon. Ingredients:
3 firm tomatoes, not necessarily the ripest of the bunch |
salt |
pepper |
flour |
bacon drippings |
Directions:
1. Wash and core the tomatoes. 2. cut in at least 1/2 thick slices. 3. Sprinkle generously with salt and pepper 4. Dredge in flour 5. Fry in bacon drippings, turning once until crispy on each side. 6. Serve with bacon slices, cheese grits and sit on the porch and enjoy your leisurely morning. |
