After drowning in tomatoes from her garden, a friend of mine came up with this unusual way to 'sandwich' tomatoes. Ingredients:
2 ripe tomatoes |
1/2 cup mayonaise |
1/2 cup grated cheddar cheese |
2 tbsp fresh dill weed |
2 tbsp chives;snipped |
lemon juice |
salt & pepper |
8 slices bread |
2 eggs |
1/4 cup milk |
3 tbsp butter |
Directions:
1. Peel the tomatoes, remove the seeds and cut into 1/4 slices. Combine mayo, cheese, dill & chives. 2. Add lemon juice, salt & pepper to taste. 3. Spread mayo mixture on the inside part of bread. 4. Add tomatoes and top with another slice of mayoed bread. 5. Press sandwich together slightly. 6. In a shallow dish beat eggs and combine milk. 7. Dip both sides of sandwich into mixture. 8. Transfer to a buttered skillet. Fry 2-3 minutes on each side, or until golden brown. 9. Serve |
