This is an old-timey sandwich which substitutes tomatoes for bread. Bless This Food: The Anita Bryant Family Cookbook. Ingredients:
2 hard-cooked eggs |
2 cans deviled ham |
mayonnaise |
12 tomato slices |
2 egg yolks |
2 tbs milk |
2 cups fine cracker crumbs |
1/3 cup grated parmesan cheese |
butter |
paprika |
Directions:
1. Chop the hard-cooked eggs fine and mix with deviled ham. Mix in enough mayonnaise to make a smooth paste. Spread the ham mixture between two slices tomato. 2. Combine the egg yolks and milk. Dip each sandwich into the batter then into the cracker crumbs mixed with cheese. Fry in butter until lightly browned. Top with a sprinkle of paprika. |
