Got this from a friend at work-no clue where she got it, but it's yummy! It's not on my diet, but I can splurge, right? Ingredients:
1 lb lean ground beef |
1/2 cup fat-free refried beans |
1/4 teaspoon sea salt |
3 tablespoons chili powder |
1/4 cup taco sauce (smooth) |
12 white corn tortillas |
vegetable oil |
6 slices american cheese |
1 head lettuce, shredded |
Directions:
1. Brown beef over low heat, break up into fine pieces. Drain. 2. Add beans, smash & mix into beef. 3. Add salt, chili powder, & 2 T of taco sauce; remove from heat. 4. Wrap tortillas in towel & microwave 20-30 seconds to soften. 5. Heat oil in deep fryer. 6. Spread meat mixture on center of each tortilla. 7. Fold tortilla over & press closed. 8. Drop each taco into hot oil & fry until crispy. 9. Drain cooked tacos on paper towels. 10. Open shells & add 1/2 slice cheese, lettuce, and taco sauce. 11. Spend next several hours on treadmill. |
