A sweet vegetable dish to accompany ham, pork, or other meal. Quick and simple to prepare, though slightly high in calories. If you use a smaller sized sweet potato (smaller servings), the calories will be reduced. Ingredients:
12 ounces sweetpotato (1 very large!) |
1 tablespoons butter |
1/8 cup brown sugar |
Directions:
1. Peel sweet potato and cut in half lengthwise. Slice each half into 1/4-inch slices. In large pot, bring lightly salted water to a boil. Add sweet potato slices and boil for 10 minutes. Immediately drain and set aside. 2. In large frying pan, over medium high heat, melt butter and add brown sugar. Stir until thoroughly mixed and bubbly. Add sweet potatoes (one layer deep) and fry for 3-4 minutes, then turn and fry until nicely browned, another 3-4 minutes. 3. Remove potatoes from pan, and serve immediately. |
