FRIED STRAWBERRIES WITH HONEY CREAM This recipe came from an estate sale. I obtained it when I purchased the family collection from the Maxwell Estate in Grand Prairie, Texas in 1981. Ingredients:
1-1/2 pounds fresh strawberries |
oil for deep frying |
1 cup flour |
1 tablespoon granulated sugar |
2 beaten eggs |
1/2 cup dry white wine |
2 tablespoons cooking oil |
1/2 cup granulated sugar |
honey cream |
1-1/4 cups cream |
1 tablespoon honey |
Directions:
1. Wash strawberries and remove stems then pat dry with paper towels and set aside. 2. Heat oil to 375 in a deep fryer. 3. Combine flour and 1 tablespoon sugar then make a well in center. 4. Combine eggs, wine and 2 tablespoons oil then add to flour mixture and beat until smooth. 5. Dip berries a few at a time into batter then fry strawberries in hot oil for 2 minutes. 6. Remove with slotted spoon and drain on paper towels. 7. While still warm roll in the remaining sugar and cool slightly before eating. 8. Whip cream with honey until thickened then serve with warm berries. |
