Great dish for the middle of the week. Its easy and quick to prepare, but you still get a healthly and, filling meal. Ingredients:
2 cups cooked rice |
1 lrg. onion, sliced |
1 green pepper, sliced |
2 ribs celery, sliced |
1/2 lb. tofu, diced |
2 tbsp soy sauce |
2 green onions, cut into 1/2 inch slices |
Directions:
1. In skillet or wok heat some oil 2. Add tofu cubes and soy sauce and stir-fry for 1 minute 3. REMOVE tofu and to the same skillet add 2 tbsp. oil, onion, green pepper, and celery. Stir-fry this for 3-4 minutes. 4. Slowly add the cooked rice 5. Add soy sauce and tofu cubes. 6. Stir-fry until hot. Serve topped with green onions. |
