Fried Rice With Mushrooms |

From the Atlanta cookbook Ladles of Love, Temple Sinai. Uses 4 cups cooked rice so good recipe if you have leftover rice. Ingredients:
2 tablespoons oil |
1 teaspoon salt |
1 dash pepper |
2 eggs, beaten |
1/2 cup mushroom, sliced |
2 tablespoons onions, chopped |
4 cups cooked rice, cold |
2 tablespoons soy sauce |
1/2 teaspoon sugar |
Directions:
1. Fry eggs in oil until firm. Add salt and pepper and cut eggs into shreds. 2. Add mushrooms and onions and cook over medium heat for 5 minutes, stirring constantly. 3. Add rice, soy sauce and sugar. Mix in pot until heated through over medium heat. 4. Serve hot. |
