4 cups cooked long-grain rice (cold) |
3 tablespoons oil |
1/2 cup chopped onion |
1 cup cooked ham, cut into small pieces |
2 eggs, beaten |
2 tablespoons soy sauce |
Directions:
1. Loosen and separate grains of rice. Place a large skillet or wok on high heat; add 2 Tblsp. oil, fry onions to a light golden brown. Add ham and cook for 2 minutes, stirring constantly. Dish onto plate and set aside. Add 1 Tblsp. oil to skillet; add eggs and stir fry until cooked. Add rice to eggs; stir in soy sauce. Add ham and onion, mixing thoroughly until completely hot. |
