You would never know this was a weight watchers recipe. Very easy and good. Ingredients:
vegetable cooking spray |
1/4 c. thinly sliced celery |
1/4 c. thinly sliced green onions |
1 tbsp. reduced calorie margarine |
1/2 c. long grain rice, uncooked |
2 oz. vermicelli, uncooked & broken into 1/2 pieces |
2 c. hot water |
1 tbsp. chopped fresh parsley |
1/2 tsp. chicken-flavored bouillon granules |
1/4 tsp. salt |
1/4 tsp. garlic powder |
Directions:
1. Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add celery and onions; sauté until tender. Transfer to a serving bowl and set aside. Coat skillet with cooking spray; add margarine and place over medium heat until margarine melts. 2. Stir in rice and vermicelli; cook over medium heat until vermicelli is lightly browned, stirring frequently. Add water, sautéed celery and onions and remaining ingredients to rice mixture. Cover, reduce heat and simmer 15-20 minutes or until rice is tender and liquid is absorbed. Stir before serving. 3. Yield 7 servings. (1/2 cup serving) 4. Weight Watcher Points - 2 Points |
