Easy dish for a change or to use up leftover rice. Ingredients:
2 cups cold boiled rice |
1/2 teaspoon salt (less if using bacon) |
4 ounces bacon or 4 ounces pork or 4 ounces chicken, diced or thinly sliced |
2 spring onions, finely sliced |
2 eggs |
1 carrot |
2 -3 tablespoons dark soya sauce (to taste) |
Directions:
1. Heat pan with a little oil. 2. Beat eggs& cook 2-3 ommelettes from mixture. 3. Roll these up& cut into thin slices, set aside. 4. Add a little more oil to pan& stir fry meat of choice til just cooked. 5. Add rice& salt, stir frying for about 5 minutes or until hot. 6. Add grated carrot& stir through. 7. Add soya sauce to taste. 8. Lastly garnish with spring onions& sliced egg. 9. Eat& enjoy. |
