Ingredients:
3 eggs, beaten |
1 teaspoon salt |
1/2 teaspoon pepper |
6 snapper fillets (about 2 1/4 pounds) |
1 cup finely crushed crackers |
1 1/2 cups shortening or lard |
lemon wedges |
cocktail sauce or tartar sauce |
Directions:
1. Combine eggs, salt, and pepper in a medium mixing bowl. Dip fish in egg mixture; roll in crushed crackers. Fry in hot shortening in a large heavy skillet until golden brown, turning once. Drain well. Garnish with lemon wedges, and serve with cocktail or tartar sauce. |
