Fried Potatoes With Onions |

The potatoes are given extra flavor by precooking them and shallow-frying them in butter with garlic, onions, and herbs. Perfect for a cold winters night which it was last night. Ingredients:
2 pounds potatoes, cubed |
4 1/2 ounces of butter |
1 red onion, cut into 8 wedges |
2 garlic cloves, crushed |
1 tsp lemon juice |
2 t thyme |
salt and pepper |
Directions:
1. Cook the cubed potatoes in a pan of boiling water for 10 minutes. 2. Drain the potatoes thoroughly. 3. Melt the butter in a large frying pan over low heat. 4. Add the onion wedges, garlic and lemon juice. 5. Cook for 2-3 minutes, stirring. 6. Add the potatoes to the pan and mix well to coat with the butter mixture. 7. Reduce the heat and cover the frying pan. 8. Cook for 25-30 minutes or until the potatoes are golden and tender. 9. Sprinkled the thyme over the top of the potatoes and season with salt and pepper. 10. Serve immediately. |
