Some people call these potato pancakes but here in Tennessee, my family always called them potato patties. This is the way my mother alway used up the left over creamed potatoes. Number of servings depends on the amount of potatoes you have. Ingredients:
2 -3 cups of left over mashed potatoes |
1 -2 tablespoon flour |
1 egg |
1 dash onion salt (optional) |
Directions:
1. In medium size bowl mix together all ingredients. 2. Heat skillet with enough oil for frying. 3. (make sure oil is HOT before you start frying patties). 4. Drop by tablespoon into hot oil and fry until crispy and golden brown. |
