Fried Potato and Onion Patties |

Makes a great side dish for any meal. To make it easier, use unseasoned prepared hash browns from the refrigerator section of your grocery. Cook time is approximate per batch. Ingredients:
4 medium potatoes, peeled and shredded |
1 small onion, minced fine |
1 beaten egg |
1 tablespoon flour |
1 teaspoon salt |
1/4 teaspoon black pepper |
1/8 teaspoon cayenne pepper |
vegetable oil (for frying) |
Directions:
1. Place potatoes between paper towels to squeeze out excess moisture. 2. Combine all ingredients except oil and mix well. 3. Heat 1/8 of oil in a large skillet and drop mixture 1/4 cup at a time into hot oil. 4. Press mixture into 3 rounds with the back of a spoon. 5. Fry until golden brown, turning once. 6. Drain on paper towels. |
