Fried Parmesan Cauliflower |

For a girl who does not like her veggies, not so shabby. Ingredients:
1 head cauliflower, dry |
2 tablespoons water |
1/4 cup flour |
2 eggs |
1/4 parmesan cheese, grated or 1/4 cup cheddar cheese, grated will work also |
salt and pepper |
italian parsley, handful finely chopped |
3 tablespoons olive oil |
Directions:
1. Break dry cauliflower into florets. 2. Place florets in the 2 tablespoons water and steam in microwave, covered, for 3 to 6 minutes. 3. Drain and cool completely, 3 to 5 minutes. 4. Place flour in one bowl. 5. Beat eggs, cheese, salt and pepper together in a separate bowl. 6. Finely chop parsley and add to egg mixture. 7. Heat the olive oil in a large saucepan, over medium until hot, but not bubbly. 8. Dip florets in flour, then in egg mixture. 9. Fry florets until brown. 10. Drain on paper towels. 11. Serve. |
