A simple recipe adapted from Mrs. Beeton's Book of Household Management (1861) Taken from The Sherlock Holmes Victorian Cookbook by William Bonnell. No Ox required. Ingredients:
4 slices bread |
2 t butter |
1/4 c sour cream |
1/4 c chopped fresh parsley |
4 eggs |
salt & pepper |
Directions:
1. With a knife or cookie cutter, cut each piece of bread into a large circle. 2. Cut a 1 1/2 inch (4 cm) hole in the centre of each circle and toast the slices. 3. Melt the butter in a large frying pan over medium-low heat. 4. Lay in the toast and place 1 T of sour cream in each hole. 5. Sprinkle with parsley. 6. Break an egg on top of the sour cream and sprinkle with salt and pepper. 7. Fry, without flipping, to desired consistency. 8. (if egg is to be cooked hard, fry on a lower heat and cover.) 9. Serve at once. |
