Fried Mexican Rice And Black Beans |

A very quick and easy side dish to a Mexican inspired meal. It makes use of left over rice, too, which is always nice. Ingredients:
2 cups cooked rice(preferably cooked in stock) |
1 1/2-2 cups cooked black beans(if using canned, don't drain, and use 1 can) |
2t olive oil |
2 cloves garlic |
2t latin, mexican or similar seasoning blend(cumin, coriander, oregano, chili, cayenne, etc) |
2 green onions, sliced |
1 small lime |
kosher or sea salt and fresh ground black pepper |
(use a bit of stock or bean water, if needed, if using dried, and cooked, beans..if using canned, this won't be necessary |
Directions:
1. Heat oil and garlic in heavy skillet(I use cast iron) over medium heat. 2. Add rice and break up and stir to coat with oil. 3. Heat about 7 minutes, stirring frequently. 4. Add beans and spices and onion and heat through, stirring often. 5. Simmer about 10 minutes. 6. Add just from lime and stir before serving. |
