FRIED MEXICAN ICE CREAM This recipe came from an estate sale. I obtained it when I purchased the family collection from the Haddox Estate in Austin, Texas in 1992. Ingredients:
1 pint vanilla ice cream |
1/2 cup crushed cookie crumbs |
1 teaspoon ground cinnamon |
2 teaspoons sugar |
1 egg |
oil for deep frying |
honey |
whipped cream |
Directions:
1. Scoop out 4 balls of ice cream then return to freezer. 2. Mix crumbs, cinnamon and sugar then roll frozen ice cream in half of mixture and freeze again. 3. Beat egg and dip balls in egg then roll again in remaining crumbs and freeze until ready to use. 4. Heat oil to 350 and place 1 frozen ice cream ball in fryer basket and lower into hot oil 1 minute. 5. Immediately remove and place in dessert dish then drizzle with honey and top with cream. 6. Continue to fry balls one at a time. |
