Ingredients:
4 pounds marlin fillets, cut into 1 1/2-inch cubes |
2 cups buttermilk |
3 cups cornmeal |
1 cup all-purpose flour |
2 teaspoons salt |
2 teaspoons pepper |
2 teaspoons celery salt |
2 teaspoons onion salt |
peanut oil |
commercial cocktail sauce (optional) |
Directions:
1. Soak marlin cubes in buttermilk in a shallow baking dish 30 minutes. 2. Combine cornmeal, flour, salt, and seasonings in a plastic or paper bag; shake to mix well. Place several marlin cubes in bag; shake well. Drop coated marlin into deep, hot oil (375°). Fry 5 minutes or until golden brown. Drain well. Repeat procedure with remaining marlin. Serve with cocktail sauce, if desired. |
