this recipe looked and sounded good to me... I liked the use of the marinated artichoke heart for extra flavor...and the dipping sauce was a spicy marinara sauce... the recipe and the photo are from Better Homes and Gardens Ingredients:
1 recipe marinara sauce (see recipe below) |
2 12-ounces or 4, 6-ounce jars marinated artichoke hearts |
1/2 cup all-purpose flour |
2 eggs |
2 tablespoons water |
2/3 cup fine dry bread crumbs |
2 tablespoons snipped fresh oregano |
1/2 teaspoon crushed red pepper |
1/4 teaspoon freshly ground black pepper |
cooking oil for deep fat frying |
marinara sauce |
in a small saucepan heat 1-1/4 cups purchased marinara sauce just until bubbly. stir in 1 tablespoon snipped fresh oregano and 1/4 teaspoon crushed red pepper (optional). serve warm with fried artichokes. makes 1-1/4 cups. |
Directions:
1. 1. Prepare Marinara Sauce; keep warm. Drain artichoke hearts, discarding marinade; set artichokes aside. Place flour in a shallow dish. In a small bowl, beat eggs lightly with the water. In another shallow dish, combine bread crumbs, oregano, and peppers. Dip artichokes in flour, egg mixture, and then bread crumb mixture to coat completely. 2. 2. In a deep-fat fryer heat oil to 365 degree F. Fry coated artichoke hearts, about 6 at a time, for 1 to 2 minutes or until golden. Drain on paper towels. Transfer to serving plate. Serve warm with Marinara Sauce. Makes 6 appetizer servings |
