This is a good one. I find it's best when people are at my home and we've had a couple of glasses of wine before dinner. Ingredients:
8 ounces of manchego cheese |
4 ounces of panko bread crumbs |
1 beaten egg |
1/2 cup of flour |
paprika to taste |
enough high quality olive oil to coat the bottom of your pan |
Directions:
1. Cut the manchego into little triangles. 2. Heat oil in skillet - medium high should work. 3. Dip the triangles into the egg, dip in flour mixture (flour mixed with paprika), cover with bread crumbs. 4. Place the triangles in oil. After 2-3 minutes, turn the triangles over. 5. It’s finished when the triangles are golden brown. 6. I find manchego frito to be best on some warm crusty bread, but it would also work with warm pita or just by itself. |
