Nice crisp with a ohhh so fimilar yummy taste on the inside. Ingredients:
4 large potatos |
1/3 cup sour cream |
2 teaspoon pepper |
2 tablespoon salt |
8oz plain panko crumbs |
1 lb bacon - cooked crispy |
8 oz mild cheddar |
4oz velvetta shredded |
3 eggs |
2 tablespoon butter |
enough veg oil to fry with |
add to the panko crumbs |
1/2 teaspoon ground red pepper |
1 teaspoon black pepper |
1/2 teaspoon chipotle |
2 teaspoon salt |
dip for potato bites |
any ranch dressing |
a little bit of chipotle seasoning |
Directions:
1. Cook Bacon Crispy, break up into small pieces. 2. Boil potatos till they break with a fork very easily. Drain and mash up with butter leaving the potatos very dry and clumpy. Do not mash Alot you want big chunks of potato in there. Now mix in butter, salt, and pepper then allow the potatos to cool then add the Sour cream, Cheese, and Bacon. Lay the mix on a large pan and use a cookie cutter to make wedges. Dip into egg bath then toss with panko crumb mixture. 3. Cook in oil 340-370 for about 1-2 min tops. Temp is crucial. If the oil is too cool it will take too long for it too cook and the potato bites will open up in the oil. Too hot and you will burn the outside of the bites and have a somewhat warm inside. 4. Serve with the Chipotle Ranch dressing. |
