That Rachael Ray-she keeps coming up with fantastic taste combinations and foods we all want to eat. Gotta love her! These little appetizers will disappear at any function. Ingredients:
1 head garlic, separated into cloves, skins on |
2/3 cup sour cream |
1 tablespoon horseradish |
1/4 teaspoon crushed red pepper flakes |
1 1/2 cups flour |
1 teaspoon baking soda |
1 pinch salt |
1 cup ice water |
6 large radishes, sliced crosswise |
8 jalapeno chiles, halved and seeded |
1 cup vegetable oil |
Directions:
1. Bring a small pot of water to a simmer. Add garlic cloves (skins on) and cook until tender, about 20 minutes. 2. Drain, then let cool slightly, slip off the skins. 3. In a small bowl, combine sour cream, horseradish and crushed red pepper. 4. Fill a medium pot with enough oil to reach a depth of 2 inches and heat over medium high until the thermometer registers 365°F. 5. Meanwhile, in a medium bowl, whisk together flour, baking soda and 1 tsp salt. 6. Whisk in ice water to form a smooth batter. 7. Working in batches of eight pieces, coat the radishes with batter. 8. Drop one at a time in hot oil, gently stirring to prevent sticking. 9. Fry until golden, about 1-2 minutes. 10. Transfer to paper towels to drain. 11. Repeat the process with garlic and jalapenos. 12. Sprinkle with salt and serve with the horseradish dip. 13. Inhale the food! |
