Fried Halloumi With Olives |

This a simple, quick introduction to the national cheese of Cypus, halloumi. Once you've used fried halloumi, you will have lots of uses for this wonderful cheese. Ingredients:
2 slices of halloumi cheese 3/8 inch thick and about 3 inches by 4 inches |
enough olive oil to coat a pan to a depth of 1/8 inch |
1 piece, 5 inches long, of baguette |
butter for baguette |
half of 1 lemon |
3 green olives |
Directions:
1. This will make 2 servings of halloumi decorated with olives. 2. Cut 2 slices of halloumi cheese 3/8 inch thick and about 3 inches by 4 inches in size from a block of cheese, rinse to remove some of the salt and pat dry with a paper towel. 3. Take the 5 inch long piece of baguette and half it length wise. 4. Butter the two baguette halves and grill. 5. Heat another frying pan, add about an 1/8 inch of olive oil. 6. When a drop of water dances and sizzles on the hot surface, place the halloumi slices in the pan. 7. Grill for about two minutes or until golden. 8. Flip the grilled cheese slices over and repeat. 9. At some point while the cheese is grilling, the baguette halves will be golden, remove quickly and place each half, grilled side up, on a serving plate. 10. Squeeze a few drops of lemon on the grilled cheese, remove from pan and place on grilled baguette halves. 11. Push the olives halves into the slightly softened grilled halloumi and serve. 12. I've used a garlic baguette with good results. Also, I have been known to spread a very small amount basil pesto on the grilled bread before placing the cheese. 13. I have also replaced the olives with slices of grilled tomatoes, dusted with coarsely ground sea salt. 14. Enjoy! |
