To lighten this classic, we added a fried crust to just one side. Ingredients:
8 (1/2-inch-thick) slices green tomato (about 4 tomatoes) |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
1/2 cup yellow cornmeal |
1 tablespoon vegetable oil |
Directions:
1. Sprinkle 1 side of each tomato slice evenly with salt and pepper. Dredge seasoned sides in cornmeal. 2. Heat the oil in a large skillet over medium-high heat. Add tomato slices, coated sides down; cook 6 minutes, turning after 3 minutes. Serve immediately. |
