To lighten this classic, we added a fried crust to just one side. Taken from Cooking Light 2002. Ingredients:
8 (1/2 thick) slices green tomato, about 4 tomatoes |
1/2t salt |
1/4t black pepper |
1/2c yellow corn meal |
1t vegetable oil |
Directions:
1. Sprinkle 1 side of tomato slices wvenly with salt and pepper. Dredge seasoned sides in cornmeal. 2. Heat oil in a large skillet over medium-high heat. Add tomato slices, coated sides down; cook 6 minutes, turning after 3 minutes. Serve immediately. 3. Serving size: 2 slices; 123 calories; 29% from fat. |
