Fried Green Tomatoes

Adapted from another recipe. I use orange but mostly green tomatoes. It can be adapted more by using a wee bit of sugar or cornmeal in the flour. Freeze by cutting tomatoes and freezing on cookie sheets and put in freezer bags. Don't thaw before you dip in flour etc. and fry.
Ingredients:
4 large green tomatoes
1/3 cup canola oil
1 cup flour
salt and pepper
2 eggs
hot sauce
1 teaspoon sugar (optional)
Directions:
1. Cut tomatoes 1/4 in thick.
2. Beat egg and add dash or two of hot sauce and sugar.
3. salt and pepper the flour. I like sea salt and freshly ground pepper.
4. Dip tomato slices in flour.
5. Dip in egg.
6. Dip in flour again.
7. Heat oil and fry until brown.
