It;s one of my husband's favorite dishes and we make it so much that my tomato plants scarcely ripen. Ingredients:
2 cups bacon drippings |
1 cup peanut oil |
1 cup all-purpose flour |
1 cup milk |
1 cup buttermilk |
1 egg |
kosher salt |
fresh ground black pepper |
1/2 teaspoon paprika |
1/8 teaspoon cayenne pepper |
2 medium green tomatoes |
2 cups panko breadcrumbs |
1 cup cornmeal |
Directions:
1. Mix Bacon drippings and peanut oil and heat until sizzling. 2. mix milk, buttermilk and 1 egg and dip sliced tomatoes in mixture. 3. Mix flour and cornmeal and seasonings and dip tomatoes in flour. 4. coat toamtoes with panko and fry 2 minutes on each side. 5. drain on paper towels. |
