Fried Goat Cheese Salad

Best way to eat salad I have tried yet! How could anything with fried goat cheese be bad?
Ingredients:
4 oz package goat cheese
2 beaten eggs
1cup (maybe more) italian breadcrumbs
juice of one lemon
olive oil
2 cloves garlic
salt and pepper to taste
Directions:
1. Roll the goat cheese into small balls ( maybe 3/4 of an inch)
2. Place in freezer for at least 30 min. (longer is better)
3. Mix together lemon juice, garlic and salt and pepper and whisk continuously while slowly streaming in olive oil. I have never measured how much oil I use, just enough to make a vineagrette like dressing.
4. Heat 1/2 inch of olive oil in a pan.
5. Roll frozen goat cheese balls in egg than in breadcrumbs ( sometimes I do it twice for thicker breading)
6. Fry in olive oil until golden brown and serve over your choice of greens (I always get a pre-made bag of spring mix) Top with dressing.
