A yummy starter to any meal or serve as a side Ingredients:
2 med eggplants, slice skin in alternating strips and slice in 1/2 inch slices |
1 cup halloumi cheese or mozzarella, grated |
1 tbsp corn starch |
1 tsp mint |
1/4 cup dill, chopped |
1 egg |
olive oil for frying |
Directions:
1. Soak the eggplants in 2 cups of salted water for 20 minutes. 2. Squeeze and dry them with a paper towel. 3. Mix all the filling ingredients in a small bowl. 4. Take a spoonful and place on one side of an eggplant slice, keep it in a half ball shape. 5. Heat the oil in a skillet over medium-high heat. 6. Fry the filling side until nicely colored. 7. turn and fry the other side. 8. Place on a kitchen towel to soak up extra oil. 9. Serve while still warm |
