tasty fried vegetables for those free days. a tasty and nutritious alternative to heavy fried potatoes! Ingredients:
1 eggplant (sliced) |
1 egg |
1/4 cup flour |
2 tablespoons olive oil |
Directions:
1. slice eggplant and salt to get extra water out. leave salt on for about 20 minutes. blot with a paper towel. 2. in a small bowl, slightly beat egg. put the flour in a separate bowl. 3. dip the slices of eggplant first in the flour and then in the egg. (make sure to coat the slices well) 4. in a frying pan, heat olive oil on medium heat. fry slices of eggplant until lightly browned. |
