Here is another recipe from my Aunt that she says was from my Mamma. I don't remember her making this one but it sure sounds yummy to me. Now will be the hard part, waiting until next summer for fresh garden veggies. Ingredients:
4 medium sized cucumbers |
1 tsp. salt |
1/4 tsp. pepper |
3/4 c. dried bread crumbs |
1 egg slightly beaten |
Directions:
1. Peel cucumbers and cut into about 1/3 inch slices. 2. Sprinkle with salt and pepper. 3. Dip into crumbs, the egg then crumbs again. 4. Fry in butter or hot oil until browned. 5. Drain on absorbent paper towels. |
