Fried Cornmeal Onion Rings |

2 or 3 large Yellow Onions 2 cups Buttermilk 1 1/2 cups Flour 1/4 cup of Cornmeal Veg. Oil Kosher Salt and Fresh Ground Pepper Ingredients:
2 or 3 yellow onions |
2 cups buttermilk |
1 1/2 cups flour |
1/4 cup cornmeal |
veg. oil |
kosher salt |
freshly ground pepper |
Directions:
1. Peel Onions and slice them 1/2 inch thick, seperate into rings 2. Combine buttermilk, 1 1/2 tsp salt, 1 tsp pepper in a medium bowl 3. Add onion rings, toss well, allow to marinate for at least 15 minutes, or up to three hours. 4. In a seperate bowl, combine flour, cornmeal, 1 tsp salk, 1/2 tsp pepper and set aside 5. Preheat oven to 200 degrees F 6. Line baking sheet with paper towels 7. Heat oil to 350 degrees F in a large pot 8. lift some onions out of the buttermilk and dredge in flour mixture 9. Drop in hot oil and fry for 2 minutes, until golden brown (turning once with tongs) 10. Place finished rings on baking sheet, sprinkle with salt, keep warm in the oven while frying the remaining rings. 11. Do not keep them in the oven more than a 1/2 hour. 12. Serve hot! |
