Fried Chicken With Peanuts |

This comes from the Diana Liu cookbook. Ingredients:
1 large chicken breast, boned, skinned and diced |
1 egg white |
1 tablespoon sherry wine |
1/2 teaspoon salt |
1 tablespoon cornstarch |
1 tablespoon water |
5 tablespoons oil |
1 cup roasted peanuts |
Directions:
1. Marinate diced chicken in mixture of water, cornstarch, salt, sherry, egg white. 2. Heat oil in frying pan or wok until hot. 3. Stir-fry chicken mixture for 3 minutes or until chicken turns white. 4. Add peanuts. 5. Serve hot. |
