This recipe came from a KENYA AND TANZANIA web site and is specifically a Swahili recipe. Ingredients:
1/4 cup cooking oil |
1/2 cup onion, chopped |
1 cauliflower, chopped |
1 teaspoon curry powder |
3 tomatoes, sliced |
salt, to taste |
1/2 cup water |
Directions:
1. Put oil into a frying pan. 2. Fry onions. 3. When onions are brown, add all the ingredients except water. 4. Fry for 2 to 3 minutes. 5. Add water. 6. Cover and cook till tender and all the stock is dry. 7. Serve hot as a vegetable dish. |
