This is an old Italian favorite which I believe everyone loves. My mom made these all the time and I've learned to become an expert at cleaning & cooking these little creatures from the deep blue sea! Ingredients:

vegetable oil for frying |
1 lb calamari, cleaned and cuts into rings |
2 cups flour |
1-2 t. salt |
1 t.pepper |
1 t.parsley |
Directions:
1. Preparation: 2. Heat 3 inches of oil in medium size saucepan to 350 degrees. 3. In large bowl, add flour, salt, pepper and parsley. 4. Dredge calamari rings, shaking off excess flour. 5. Carefully drop a handful at a time into hot oil for about a minute or until light golden brown. 6. Remove with large slotted spoon, drain on paper towel, salt while still hot and serve immediately. 7. Note; Serve with Marinara Sauce |
