These are crispy fried calamari served with thai sauce for dipping...the best calamari I have ever had! Ingredients:
1 1/2 lbs. fresh squid |
1 cup flour |
1 tsp salt |
1 tsp. dried oregano |
1 tsp. paprika |
1/2 tsp. black pepper |
vegetable oil for frying |
1 egg (scrambled) |
for the thai sauce |
1/2 cup water |
1/2 cup sugar |
1/4 cup vineger |
1 tbsp. corn starch |
1 tbsp. ketchup |
1 tsp. crushed red pepper |
Directions:
1. Clean the calamari (cut off heads, slice leangthwise, and remove all the stuff inside. peal off purplish skin, and should be left with off-white, flat pieces. rince well) 2. slice calamari pieces into lengthwise strips 3. preheat deep fryer to 375 degrees 4. TIME TO MAKE THE SAUCE.. 5. boil sugar add water in small pot 6. add vineger, ketchup, corn starch, the rest of the garlic, and red pepper and mix well. 7. let sauce cool, then serve on side of calamari 8. BACK TO THE CALAMARI... 9. mix flour, salt, oregano, paprika, pepper in a bowl 10. put all the calamari strips into the egg, then drop into flour mix making sure each piece is well coated with flour 11. drop into hot oil, and let fry until light to golden brown 12. let strain, salt to tase, and serve with Thai sauce. 13.
