My wife is half German, but usually will not eat cooked cabbage unless I make it...what a sweetheart!!! Try this as a side dish for pork roast or chops..... Ingredients:
1 medium head cabbage, coarsely shredded |
2 -3 slices smoked bacon, diced |
1 medium onion, chopped |
1/4 lb butter, divide in half (not margerine) |
1/2 teaspoon salt |
1 teaspoon caraway seed (optional) |
1/2 teaspoon marjoram leaves (optional) |
1 -2 tablespoon light brown sugar (optional) |
Directions:
1. Remove outer leaves of cabbage & cut off the end of core. 2. Coarsely shred the cabbage, including the core (the core's the best part) & set aside. 3. Melt half the butter in a large skillet (cast iron works best). 4. Add the onion & bacon - cook, stirring occasionaly. until onion is soft & bacon is lighly browned. 5. Remove from skillet & set aside. 6. Melt the rest of the butter & add the shredded cabbage. 7. Cover & cook until cabbage is somewhat limp & lightly browned, stirring occasionaly - about 15-20 minutes. 8. When cabbage is done, add the salt & any or all of the other listed seasonings - cover & cook another 10 minutes. 9. ENJOY! |
