Ingredients:
1 tablespoon(s) course salt |
8 ounce(s) dried black-eyed peas |
1/4 cup(s) packed dark brown sugar |
1/4 teaspoon(s) pimenton |
8 cup(s) vegetable oil |
Directions:
1. Soak peas in cold water for 3 hours. Drain and pat dry. 2. Wisk together sugar, salt, and pimenton. 3. Heat oil in a large heavy pot over medium heat until it reaches 375 on a deep-fry thermometer. 4. Working in batches, fry peas until golde and crisp, 5 to 7 minutes. 5. Transfer to a paper-towel lined tray. Drain for about 30 seconds. 6. Immediately transfer peas to a large bowl, and sprinkle with sugar mixture. Toss lightly to coat. |
