These are a great snack, side dish, dessert, breakfast...anything goes!! Another great way to use up apples that are past their prime. Simple, but different and very tasty, and kids love these, too. I think I practically lived on these when I was a kid...grandma made them for us all the time:) When served as a dessert, they are great with a dollop of whipped topping. Ingredients:
4 -6 tart cooking apples, peeled and cored |
1 cup flour |
2 tablespoons sugar |
1 teaspoon baking powder |
1 dash salt |
2 eggs, lightly beaten |
2/3 cup milk |
1 tablespoon crisco shortening, melted |
crisco shortening or oil, for frying |
cinnamon (for sprinkling) |
sugar (for sprinkling) |
Directions:
1. Slice apples cross-wise into 1/2-inch thick rings. 2. Combine flour, sugar, baking powder, and salt in medium bowl. 3. In separate bowl, combine eggs, milk, and melted Crisco. 4. Add egg mixture to dry mixture and beat until smooth. 5. In large, heavy skillet, preheat about 1/2 inch deep shortening or oil to about 365 degrees. 6. Dip apple slices, one at a time, into batter to coat well. 7. Fry in hot oil about 2 1/2-3 min. 8. or until brown and edges are crispy, turning once. 9. Drain on paper towel. 10. Sprinkle with cinnamon and sugar and serve warm. 11. mmmm! |
