Friday Night Carrot Leek Parsnip Chicken Orzo Soup |

I cooked this in my pressure cooker. but a good soup pot will do. This is a filling and comforting soup. You can use orzo or rice and add whatever veggies you like but I like it simple. Ingredients:
1 large bunch of carrots washed and tops off |
1 large bunch of parsnips washed and tops off |
3 leeks tops cut off and discarded |
1 chicken or chicken parts washed and excess fat removed |
skin on or off as preferred |
4 teaspoons granulated chicken boullion |
white pepper |
fresh dill |
fresh bread or crackers |
Directions:
1. put chicken, whole parsnips, whole carrots and leeks in pot 2. fill with water tto cover chicken and veggies 3. cook on med/high til hot 4. add boullion crystals ,pepper and dill 5. stir gently 6. lower to high simmer 7. remove chicken pieces when done 8. remove all veggies 9. separate into 2 groups 10. slice 1/2 carrots and parnips add to soup 11. place rest in blender and puree in 1 cup of soup 12. add puree to soup 13. - 14. heat salted water to cook orzo and cook al dente 15. - 16. remove chicken from bones 17. cut or tear into bite size pieces 18. add to soup 19. - 20. add orzo 21. - 22. That's it! Enjoy! |
