Fricassee N' Chicken Balls |

A recipe request. From the cookbook The Heimishe Kitchen Ingredients:
2 onions (diced) |
1 lb chicken wings, necks, and feet |
1/2 teaspoon salt |
1/4 teaspoon pepper |
2 tablespoons flour |
1/2 lb ground chicken |
1 onion, grated |
2 tablespoons matzo meal |
1 egg |
1 garlic clove, crushed |
1/4 teaspoon salt |
1/8 teaspoon pepper |
1/4 teaspoon paprika |
Directions:
1. Saute onions in oil. Add chicken parts and seasoning. Saute for 15 minutes. Add flour and stir for 2 minutes. Add water to barely cover and cook for 1 hour. 2. Combine all ingredients for chicken balls, forming into tiny balls and drop into sauce. Cook over low heat for 30-40 minutes. 3. Optional: Cubed liver pieces may be added to fricassee 5 minutes before done. |
