You can use my fresh white cheese or yogurt cheese for this recipe or you can purchase cheese. This recipe is from “The Good Stuff” Cookbook by Helen Witty. This will keep, refrigerated, for up to two weeks. Ingredients:
1 cup firm fresh white cheese or yogurt cheese |
4 tbsp. unsalted butter at room temperature |
2 tsp. caraway seed, crushed slightly in a mortar |
pinch of salt, if desired |
freshly ground white pepper, to taste |
Directions:
1. Cream everything together by beating with a wooden spoon or in an electric mixer. Cover, refrigerate and allow to mellow for a few hours, if possible, before serving. |
