This is the perfect summer time salad. Great for Bbq's/Potlucks or just to have on hand for a light Delicious quick meal. keeps well covered tight for up to 3 days in the refrigerator without the citronette..just add citronette to individual portions right before eating. Read more .. Ingredients:
5 cups seedless watermelon cut in to 1 1/2 in. cubes or use a melon baller to make melon balls, you can also cut mellon in to 1/2 inch wedges. |
1 large cucumber sliced length wise, seeded then placed cut side down and sliced across to make 1/4 in half moon slices |
1/2 cup shaved red onion or slice very thin |
1/4 cup kalamotta olives ruff chopped |
3/4 cup crumbled feta cheese |
1/2 cup fresh chiffonade of basil |
3 lemons juiced and zested |
2 tbsp honey |
1/2 cup evoo |
salt & pepper to taste |
Directions:
1. Add all except for the last 4 ingredients to a large bowl (chill) 2. In a small bowl using a whisk mix the last 4 ingredients till well emulsified, adjust salt & pepper to your liking 3. pour over chilled salad and toss 4. enjoy...... |
