A nice, light vegetable soup. Super filling and easy to make! Ingredients:
1/2 chopped red onion |
1/2 chopped red pepper |
1/2 cup chopped tomato |
1/2 cup chopped mushroom |
2 1/2 cups water |
1 1/2 oz. spinach |
1 tablespoon oregano |
3 tablespoons mint |
1 tablespoon cilantro |
2 tablespoons capers |
1 salt |
1 ground pepper |
Directions:
1. Sauté onions, pepper, and mushroom with a few sprigs of the mint 2. Add water, herbs, rest of mint, capers, and salt and pepper to taste. 3. Bring to a boil and then turn down heat and let simmer 4. Add spinach, let cook for a bit longer 5. Enjoy! |
