Fresh Tomato Tartar Sauce |

This is the first tartar sauce I liked. This has the taste of tomatoes and jalapenos mixed in with good quality mayonnaise. This recipe comes from Simply Elegant, a cookbook from the Windsor Court Hotel in New Orleans. This is a lovely accompaniment to crab cakes, fresh fish, or fried duck. Ingredients:
2 fresh tomatoes, peeled, seeded, and finely chopped |
2 fresh jalapeno peppers, stemmed, seeded, and finely chopped |
12 cornichons, finely chopped |
2 tablespoons capers, finely chopped |
1/4 medium onion, peeled and finely chopped |
2 cups mayonnaise (use hellman's or homemade) |
2 lemons, juice of |
Directions:
1. Combine all the ingredients in a medium bowl. 2. Cover and refrigerate for 1 hour before serving. 3. Any leftover sauce may be stored, covered, in the refrigerator for up to 3 months. |
