A family summer favorite. Nice way to use some of the abundant fresh garden tomatoes!
Ingredients:
2 large fresh tomatoes
8 ounces cream cheese (softened)
1 green onions (minced) or 1 shallot (minced)
1 garlic clove (minced)
1 dash milk
italian seasoned breadcrumbs
olive oil (for frying)
Directions:
1. Put softened cream cheese, garlic and green onion into a small bowl and blend well. If the cream cheese it too hard to mix, add a dash of milk and it will blend easier.
2. Slice tomatoes into thick slices.
3. Take one slice of tomato and spread cream cheese mixture evenly on top of tomato. (a bit messy to do!).
4. Cover with another tomato slice.
5. Dip your tomato sandwich in italian bread crumbs and cover both top and bottom in crumbs.
6. Repeat for remain tomato slices.
7. Heat olive oil in a large skillet.
8. Add tomato stackers and fry until bread crumbs are lightly brown.
9. Serve immediatly.
