Fresh Tomato Sauce With Lots of Garlic |

I got this recipe from a friend in Montreal. This man missed his calling and should have become a chef...he makes cooking look so effortless. This full bodied sauce is wonderful with pasta Ingredients:
1/4 cup olive oil |
6 garlic, chopped |
1 shallot, large, chopped |
6 medium tomatoes, seeded and chopped |
1 teaspoon sugar |
1 tablespoon fresh basil |
2 teaspoons tabasco sauce |
salt and pepper, to taste |
1/4 cup parmesan cheese, grated |
Directions:
1. In a large sauce pan, add the garlic and shallot to the olive oil and cook for 3 - 4 minutes or until soft. 2. Add the tomatoes, sugar, basil, tabasco sauce, salt and pepper, parmesan cheese and cook for 15 minutes. |
